Burrito Bowl Recipe


My all time favourite restaurant is Mucho Burrito (doesn’t take much to please me, that’s for sure!) Whenever I go, I always get a bare burrito bowl. However, inspired by tonedandfit.net, I know make my own at home!

12 oz chicken breast
1/2 cup of canned corn
1/2 cup of black beans
1 cup of salsa
1/2 cup of cilantro
1 cup of Whole Grain Minute Rice
Package of taco seasoning
2.5 cups of water

In an oven safe pan, pour 1 cup of water over chicken
Pour half the contents of the taco seasoning bag on top
Bake for 20 minutes at 425, flipping half way

Meanwhile, pour 1.5 cups of water in a pot
Add the other half of the taco seasoning
Bring to a boil
Add cup of rice
Reduce heat and simmer until rice absorbs all the liquid, stirring occasionally

Place half of the rice in bottom of bowl
When chicken is cooked through, cut into small chunks then place half over rice
Place 1/4 cup of corn over chicken
Place 1/4 cup of black beans over chicken
Pour 1/2 cup of salsa over mixture
Top with 1/4 cup of cilantro

Viola! A nice, easy meal! Mix it up and enjoy!

You can also add avocado, cheese and/or sour cream for more flavour!
