Cherry Chocolate Cake

I was highly intrigued by a post on pinterest about 2 point chocolate cupcakes (based on Weight Watchers).  Basically, you just add diet coke to chocolate cake mix and voila!  You’ve got low point cakes!

In my quest to live a healthier life, I’m really focusing on cutting out aspartame, and right now am detoxing from my big diet coke addiction.  So, I decided to improvise with some Zevia which is a zero calorie soda made from Stevia  instead of sugar or artificial sweeteners. 

I was going to pick up some Zevia colas to make the cake with, but then realized that Black Cherry would give it a nice flavour, so went with it instead.

The result?  Pure AMAZING!  It is quite simply a chocolate cherry party in your mouth.  Moist, rich and decadent – this is a winner in my books.  The only problem is not eating the whole cake!
Ingredients:
1.25 cans of Black Cherry Zevia (bonus – you get the extra 3/4 of the can to drink!)
Box of your favourite chocolate cake mix (I used the one pictured)


Directions:
Preheat oven to 325
Empty cake mix into pan
Empty 1 and 1/4 cans of Black Cherry Zevia into pan
Stir until all the mix is dissolved
Bake in oven for 30 mins
Enjoy!

(While it was very good straight out of the oven, I preferred it once it had cooled!)

1600 calories for full mix
Simply divide by number of cake slices or cupcakes that you make – I did 10 slices of cake which made each piece 160 calories (although I ate 6 pieces…so there’s that.)
