As I mentioned before, my dinner tonight had to have nut, dairy, gluten, meat and sugar free options! A lot to consider, but I pulled it off!
Soup:
1 full cauliflower
3 cups of sliced carrots
2 diced onions
2 cups of leeks
1 cup of diced potatoes
1 bunch of celery
12 cups of water
6 vegetable broth cubes
3 tbs of oil
– Saute the onions and leeks in the oil
– Add all the other veggies
– Add the water
– Add the cubes
– Bring to a boil, stirring occasionally
– Let simmer until veggies are soft
Chili:
2 cans of red kidney beans
1 can of black beans
1 can of corn
2 cups of bell peppers
1 cup of carrots
2 diced onions
2 cans of pasta sauce
3 tbs of oil
chili powder to taste
(normally I also put hot sauce, but various visitors don’t have the same tolerance as I do)
– Saute onions in oil
– pour in pasta sauce
– add all other ingredients
– bring to boil, stirring occasionally
– let cool until thickens
Stew:
2lbs stewing beef
1 cup bell peppers
2 diced onions
1 cup of carrots
1 cup of frozen corn
1 cup of frozen green beans
2 potatoes, peeled and diced
1/3 cup of garlic powder
2 cans of cream of potato soup
– Preheat oven to 375
– add all ingredients in potatoes
– evenly distribute garlic powder over ingredients
– evenly distribute soup over ingredients (I watered the soup down abit to make it easier)
– cook for about an hour, checking meat is cooked
Sheppard’s Pie
1lb ground beef
garlic powder to taste
1 cup frozen corn
1 cup frozen green beans
7 potatoes, mashed
– Brown ground beef on frying pan with garlic powder
– Boil corn and beans
– Make mashed potatoes
– Mix browned ground beef in bake pan with 1/2 of the corn and beans
– Mix mashed potatoes with remaining vegetables
– Evenly distribute mashed potato/veggie mix over ground beef
– Bake at 375 for about 15 minutes, or until potatoes are golden on edges
Tofu Sheppard’s Pie
Package of extra firm tofu
3 tbs of oil
garlic powder to taste
other spices to taste
1 cup frozen corn
1 cup frozen green beans
7 potatoes mashed
– Dice tofu
– Fry tofu in oil with garlic powder and whatever other spices you like
– Boil corn and beans
– Make mashed potatoes to taste
– Mix tofu in bake pan with 1/2 of the corn and beans
– Mix mashed potatoes with remaining vegetables
– Evenly distribute mashed potato/veggie mix over tofu
– Bake at 375 for about 15 mintues, or until potatoes are golden on edges
Strawberry No Bake Ice Cake
Tub of cool whip (I used light)
Sleeve of graham crackers (I used about 8 crackers – but will depend on size of container you use)
2lbs of strawberries
– Cut strawberries in half
– Spread a layer of cool whip on bottom of container
– cover cool whip with a single layer of graham crackers (you can break them to fit in the spots that don’t meet)
– spread a layer of cool whip over graham crackers
– lay a single layer of strawberry halves over whip cream
– cover strawberries with a single layer of graham crackers (you can break them to fit in the spots that don’t meet)
– continue until you reach the top of the container, finishing with a layer of whip cream- and strawberries on top
-* Optional * drizzle melted chocolate over top
Apple Crisp
– Peel and dice 10 midsize apples
– mix with 4tbs of lemon juice
– mix with 1 tbs of vanilla
In separate bowl:
– add 2 cups of splenda
– add 2 cups of rolled oats
– add 1 tbs of cinnamon
– mix ingredients
In separate bowl:
– melt 1 cup of margarine
Then:
– spread apple mixture in oven safe pan
– pour melted margarine over apple mixture
– pour splenda/oats/cinnamon mixture over melted butter and apple mixture
– cook at 375 for about an hour
I also made yonanas
– so frozen banana and strawberry ice-cream-like dessert. I just put some frozen bananas and strawberries in the yonanas machine! Fast, easy and yummy! Great for the no-added sugar/dairy/gluten free crowd!
