Protein Banana Pancakes

 I’m not a big fan of breakfast, and ‘breakfast for dinner’ drives me bonkers – it just doesn’t make sense! Anyways, I’m normally quite content with a bowl of cereal or protein shake for breakfast, but with the time change yesterday, we got up a bit later and I decided to make brunch. Well, I made pancakes – that counts as brunch right?

Just like breakfast, I can really take or leave pancakes, but I’ll take these ones again! They were super easy to make, very yummy and very filling! Even though they weren’t very fluffy, they were very moist and melted in my mouth! The original recipe is from makethebestofeverything.com, but of course I modified it to make it lower calorie and higher protein.

Ingredients:
1 cup of whole wheat flour
1 cup of protein powder
2 teaspoons of baking powder
1 1/2 cups of 0% fat Greek Yogurt
1 1/4 cups of almond milk
2 tablespoons of melted margarine
2 bananas, mashed

Directions:
1. Combine all ingredients in a bowl
2. Blend ingredients with a hand blender or in a food processor
3. Heat a frying pan to medium heat
4. Pour 1/4 cup of mixture into pan
5. Once mixture begins to bubble and bottom is firm, flip and fry other side
6. Continue to fry mixture in 1/4 cup servings until gone

Makes 18 pancakes at 77 calories each
