Lunch:
I was craving some chicken nuggets, so I indulged in 5 Janes nuggets I had in the freezer.
Fries were out of the question due to calorie count, so I decided to try this recipe for zucchini chips – unfortunately they came out nothing like the picture 🙁 Instead, they were really damp and smushy. I used 2 zucchinis and put a tablespoon of salt over them – it was WAY too much salt. Made it rather unpleasant to eat. Needless to say, I won’t try that again!
Dinner:
I had better success with dinner.
I started with eggplant sticks, which turned out really well! I did find them a little bland though, so next time I’m going to add some garlic powder and garlic salt to give it a bit more flavour.
Then the main course was cajun chicken pasta. It was pretty easy to make, but again, I found the recipe a little bland – so I added more cajun seasoning and some crushed red pepper flakes, to give it some more kick!
I also substituted almond milk for the skim milk and extra soup broth for the cream cheese – this could be what caused it to be bland.
