Zucchini Applesauce, No Oil, No Egg, Protein Powder Bread Recipe

I modified a Zucchini Applesauce Bread recipe found on yummly.com, into a Zucchini Applesauce, no egg, no oil muffin recipe (should also be sugar free, but I ran out of Splenda).

1.5 cups whole wheat flour
.5 cup whey protein powder
3 tsps baking powder
1 tsp coarse salt
3 1/2 tsp cinnamon
1 1/2 cups unsweetened applesauce
3/4 cup Splenda
3/4 cup Sugar *see note below*
2 cups freshly grated zucchini
1 tsp vanilla extract


Preheat oven to 350. Grease one 9×5 loaf pan and set aside.

  1. Sift together flour, baking soda, baking powder, salt and cinnamon into a bowl.
  2. In a separate bowl stir together applesauce, sugar/Splenda*, zucchini and vanilla. Make sure it is fully combined.
  3. Carefully pour flour mixture into egg mixture, stirring until completely combined.
  4. Pour into muffin cups – bake 25 minutes for 12 muffins


Makes 19 muffins at 86 calories with sugar; 55 without sugar

*I ran out of Splenda, so had to use sugar as well. These turned out a little too sweet for me, so next time, I’ll only add 3/4 cup of Splenda (and not add the extra 3/4 cup). Also, since the protein powder replacement worked so well, I’m going to up it to 1 cup protein powder and 1 cup flour (instead of 1.5 flour/.5 protein powder)!
