Zucchini Lasagna

I absolutely LOVE lasagna, so I was super pumped when I found this lower calorie option from skinnytaste.com.

Of course, I made some adjustments:
1. I don’t have a mandolin, so I just cut my zucchini in thin slices. Obviously, they weren’t as thin, so I used 5 zucchinis.
2. I didn’t have lean ground beef, so I just used regular. This obviously added a significant amount of calories – if you want to lower yours, use lean ground beef, or better yet, ground chicken or turkey.
3. I’m not a big cheese fan (funny, since I love lasagna and pizza), nevertheless, I do enjoy mozzarella. So, I didn’t use ricotta or Parmigiano Reggiano, and just replaced their values with equivalent amounts of mozzarella.

Now, I’m not going to lie, this was a pretty involved affair, however it was so delicious, it was definitely worth it and I’ll be making it again 🙂

Makes 8 servings
401 calories per serving (you can lower this by using lean ground beef or ground chicken/turkey)
(but we enjoyed it so much, we ate 2 servings…oops!)
